Tasting Notes
pecan - Swiss water processed coffees are all extremely nutty. This coffee is no exception. Pecan brings in notes of smooth bitterness as well as nice and salted nuttiness.
cocoa powder - Cocoa powder is a really effective descriptor of nice bitterness with nuanced chocolate notes. With the sweetness we were picking up being more primarily a developed sugar kind of sweetness, we felt cocoa powder to be the most helpful descriptor of the cocoa notes we found.
toffee - Toffee ties in the developed sugar notes we picked up in the cup while maintaining a relatively dry mouthfeel as you drink it.
EL Diamante Coffee Production
In his mid-fifties, Florencio might be the hardest-working member of the diligent and much-revered Villatoro family. His lauded brothers include Aurelio Villatoro of COE-winning Finca Villaure, Pedro Villatoro of the always sparkly Guayabales lots, Juan Villatoro of El Milagro, and the eldest brother, Julian of the Los Olivos lots.
He started young, with a coffee nursery and a small lot given by his father. He's been working earnestly since he was 13. At the age of 25, he was in a tragic car accident that damaged his leg, but he's continued working with support from his family: His wife Lesvia Marilú López and his 4 children, Maikel, Riner, Yelsin y Danita, and now his 5 grandchildren. Florencio has a great sense of humor, and like the rest of his family is kind and generous; a great host. He loves to watch soccer with the community and spends a lot of time with his family.
