Tasting Notes
cream - Given this coffee is an auction lot, each of these notes are presented in an incredibly clean and clear way. The consistency of this coffee makes the mouthfeel extremely smooth and easy to sip. Cream represents more so how smooth the coffee is rather than any specific flavor.
almond - Touches of nutty flavors sit on this cup. Almond has a nuanced bitterness with very pleasant smoothness, which we feel best describe the profile as we cup it.
cocoa - Chocolate is the classic note locked into the terroir of washed Guatemalan coffees. This lot is no exception, and the smooth and subtle bitterness encapsulates a delicious and interesting classic profile.
El Diamante Coffee Production
Mr. Florencio Villatoro began working with his father Eleodoro de Jesús Villatoro (founder of Finca La Esperanza) when he was fifteen years old and at the age of 20, he started his own farm in 1986.
He began with the production of seedlings to sell and obtain some money to be able to plant his first coffee plants on his first plot of land. He worked 4 years to be able to establish his first lot of 45 cuerdas (1.9 hectares) during of coffee plantation and later start with the production of specialty coffees.
The name "El Diamante" arises given the importance that the land has for Florencio, he suffered a lot to be able to establish his productive unit, with several years of dedication and hard work. His farm is a treasure for him and everything he has been able to achieve is the reward of all his efforts over many years. The farm has the varieties: caturra, bourbon and maragogype at elevations ranging from 5,000 to 6,500 feet.
