The distinctly not-sour citrus tang of blood orange we felt was a helpful note for this descriptor.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\u003cstrong\u003eCacao Nibs -\u003c\/strong\u003e Cocoa also came forward  in this coffee, but it a more nuanced and complex way than some more traditionally processed Costa Rican coffees. Cacao has that unique “almost fruity” taste to it that we thought was a helpful way to implicitly portray this idea.\u003c\/p\u003e\n\u003ch3\u003eIvan Solis's Coffee Production\u003c\/h3\u003e\n\u003cp\u003eIvan is one of the most innovative coffee producers in Costa Rica right now. Drawing from his decades of experience in coffee production, as well as his knowledge as a certified Q-grader, Ivan is constantly looking for new and exciting places to take his coffee. And, because he operates his own wet and dry mill in-house, he is able to have total control over producing the best product possible from beginning to end. \u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eWe got to see this first-hand when we visited him in Costa Rica recently. In addition to being one of the cleanest operations we’ve seen, we got to drive up into the mountains to see one of his farms, meet some of his pickers with their kids, and cup coffees with him. It was impressive. No less impressive was Ivan himself who, despite winning Costa Rica’s Cup of Excellence last year, was humble, always seeking ways to improve and make his coffee better. \u003c\/p\u003e\n\u003cp\u003eBut none of that was the highlight of the trip. The week before we visited Ivan, I had given a bag of his coffee to one of our exporters in Guatemala, who cupped it shortly after we left. While I was with Ivan, they sent a note telling me that his coffee was so good–stunning even. Sharing that feedback with Ivan was such a special moment. \u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eWhat Ivan is doing in Costa Rica is unique to him–he’s even coined a name for a new processing method, the ‘candy natural’--which makes us all the more excited to share what he’s doing with the rest of the world.\u003cspan style=\"font-weight: 400;\"\u003e\u003cbr\u003e\u003cbr\u003e\u003cem\u003eWhat is the Candy Natural Process?\u003c\/em\u003e\u003cbr\u003e\u003cbr\u003eThis is a naturally dried process with an extra kick to it. After the cherries are collected and delivered to the Santa Fe Mill they are placed in plastic bags with a fermentation period in mind. The juices created as a by-product by the rested aka “reposado” cherries accumulate in the bag and intensify the fermentation. This coffee juice is called, “Mosto”. The coffee cherries are left in the sealed plastic bags with the Mosto for 3 or 4 days. Once the fruit has reached the correct level of fermentation it is put out to dry on perforated raised beds. Most everything either quickly becomes out of our price range or just doesn’t shine on the cupping table in the ways we expect an Ethiopian coffee to. This lot from Morkata is different though. Very fairly priced for the cup quality, we were very impressed with the clarity and soft sweetness that this natural processed coffee has. We don’t pick up an intense acidity, more so a muted sweetness, which frankly I’ve been craving lately. A bit of rest really helps open this coffee up a bit. Brendan happened to be there at the time and hopped into the cupping with us. He mentioned that he was an importer looking to get the ball rolling on this new venture of his and we exchanged info, kind of your typical networking chit chat. A month goes by I’m in the shop and Brendan swung by, said hi, and dropped off a sample of an auction lot of Guatemalan and some Ethiopian coffees.\u003cbr\u003e\u003cbr\u003eWe cupped them like we usually do samples and were very impressed with the complexity of these Ethiopian coffees from Morkata. Immediately we knew this was looking to be a great partnership and bought a pallet of Morkata’s washed and natural offering. He's been working earnestly since he was 13. At the age of 25, he was in a tragic car accident that damaged his leg, but he's continued working with support from his family: His wife Lesvia Marilú López and his 4 children, Maikel, Riner, Yelsin y Danita, and now his 5 grandchildren. Florencio has a great sense of humor, and like the rest of his family is kind and generous; a great host. He loves to watch soccer with the community and spends a lot of time with his family.\u003cbr\u003e \u003cbr\u003e The name \"El Diamante\" arises given the importance that the land has for Florencio, he suffered a lot to be able to establish his productive unit, with several years of dedication and hard work. His farm is a treasure for him and everything he has been able to achieve is the reward of all his efforts over many years. Paola spent many years previously working as a cupper and buyer in Nariño and Huila for an exporting company.
